Trung Chien Thit Bam (Vietnamese Pork and Egg Omelette)

Every Vietnamese family has a version of this. Pork mince is fried with fish sauce and spring onion, beaten egg goes over the top, and the whole thing sets into a thick omelette that gets cut like a pizza.

It is cheap, it is on the table in under twenty minutes, and it is the reason a fridge with six eggs and a small amount of mince is never really empty. Serve with rice, sliced tomato and cucumber, and a small bowl of nuoc cham.

Ingredients

  • 6 eggs
  • 200g pork mince
  • 2 tbsp fish sauce
  • 1 tsp caster sugar
  • 4 spring onions, finely sliced
  • 2 garlic cloves, finely chopped
  • 2 tbsp neutral oil
  • Ground black pepper
  • 2 tomatoes and 1 Lebanese cucumber, sliced, to serve
  • Nuoc cham, to serve

Instructions

  1. Beat the eggs with 1 tbsp of the fish sauce, the sugar, half the spring onion and a good grind of pepper.
  2. Heat 1 tbsp of the oil in a 24cm non-stick frying pan over medium high heat. Fry the pork mince with the garlic and remaining fish sauce for 4 minutes, breaking it up well, until browned and dry.
  3. Spread the pork in an even layer, add the remaining oil around the edge and pour the egg mixture over the top.
  4. Cook over medium low heat for 4 to 5 minutes until the base is set and golden and only the top is loose. Slide it onto a plate, invert it back into the pan and cook for 2 minutes more.
  5. Cut into wedges and serve with rice, sliced tomato and cucumber, the remaining spring onion and a bowl of nuoc cham for spooning over.
