Tonteki (Japanese Garlic Soy Pork Steak)

Tonteki is the pork steak of Mie Prefecture, and it is about as direct as Japanese cooking gets. A thick pork loin steak, a very hot pan, and a sauce built on garlic, soy, mirin and Worcestershire that reduces to a sticky glaze in under a minute.

The shredded cabbage is not a garnish. A generous raw pile of it soaks up the sauce and keeps the whole plate from feeling heavy, and it is the reason this eats like a full meal rather than just a piece of meat.

Ingredients

  • 2 pork loin steaks, about 2cm thick (250g each)
  • 1 tbsp plain flour
  • 1 tbsp neutral oil
  • 4 garlic cloves, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp Worcestershire sauce
  • 1 tsp caster sugar
  • 20g butter
  • 1/4 green cabbage, very finely shredded
  • 1 tomato, cut into wedges
  • Salt and black pepper

Instructions

  1. Snip the fat rim of each steak in a few places so they do not curl. Season both sides with salt and pepper and dust lightly with flour.
  2. Soak the shredded cabbage in cold water for 5 minutes, then drain and spin or pat dry. This is what makes it crisp.
  3. Heat the oil in a heavy frying pan over medium high heat. Fry the steaks for 3 to 4 minutes each side until deeply browned and just cooked through, then move them to a board to rest.
  4. Turn the heat to medium low, add the garlic to the pan and fry for 30 seconds until pale gold. Add the soy, mirin, Worcestershire and sugar, let it bubble for a minute, then swirl in the butter.
  5. Slice the steaks into thick strips, pile the cabbage and tomato beside them and spoon the garlic sauce over the pork.
