Tom Rim (Vietnamese Caramelised Prawns)

Tom rim is one of those humble Vietnamese home dishes that punches way above its weight. Prawns are tossed in a quick caramel made from sugar and fish sauce until they're coated in a sticky, savoury-sweet glaze with a good hit of black pepper.

In Vietnam it's everyday family food, served simply with rice and maybe a plate of greens, but it tastes special enough that you'll want to make it for guests too.

The whole thing comes together in one pan in under twenty minutes, so it's a genuine weeknight hero. The trick is not to walk away from the caramel; once it turns amber, everything moves fast.

Pantry bits

  • Large frying pan or wok
  • Small heatproof bowl
  • Wooden spoon or spatula
  • Paper towel

Ingredients

  • 700g large green (raw) prawns, peeled and deveined, tails on
  • 2 tbsp white sugar
  • 1 tbsp water
  • 2 tbsp fish sauce
  • 1 tbsp neutral oil
  • 3 garlic cloves, finely chopped
  • 2 shallots (eschalots), finely chopped
  • 1 spring onion, sliced, white and green parts separated
  • 1 long red chilli, sliced (optional)
  • 1/2 tsp freshly ground black pepper, plus extra to serve
  • 1 tsp lime juice
  • Steamed jasmine rice, to serve

Instructions

  1. Pat the prawns very dry with paper towel; dry prawns take on the caramel much better than wet ones.
  2. Put the sugar and water in a large frying pan or wok over medium heat and let it melt without stirring, swirling the pan occasionally, until it turns a deep amber caramel, 3-4 minutes.
  3. Carefully add the fish sauce (it will bubble and spit) and swirl to combine into a glossy sauce, then scrape it into a small bowl and set aside.
  4. Wipe out the pan, add the oil and fry the garlic, shallots and the white parts of the spring onion over medium-high heat for about 1 minute until fragrant.
  5. Add the prawns and stir-fry for 1-2 minutes until they just start to turn pink.
  6. Pour in the caramel sauce, add the chilli and black pepper, and toss for another 2-3 minutes until the prawns are cooked through and coated in a sticky glaze.
  7. Finish with the lime juice and the green spring onion tops, then taste; add a splash more fish sauce if it needs it.
  8. Serve straight away over steamed jasmine rice with an extra grind of black pepper.
