Khao pad sapparot is the fried rice that turns heads when it comes out of the kitchen, especially when it's served in a hollowed-out pineapple. Sweet, juicy pineapple against savoury curry-spiced rice, plump prawns and buttery cashews is a combination that just works.
The trick, as with all fried rice, is cold day-old jasmine rice and a hot wok, so the grains fry rather than steam. A little curry powder gives it that signature golden colour and gentle warmth.
It's a brilliant way to use up leftover rice, and it goes from wok to table in about 15 minutes of actual cooking.
