Teriyaki Salmon

Teriyaki salmon is one of those dishes that tastes like it came from your favourite Japanese restaurant, yet it comes together at home in about 20 minutes. The salmon is seared until golden, then bathed in a sweet-savoury glaze that bubbles down to a glossy coating.

The magic is in the sauce, and it's just four pantry staples: soy sauce, mirin, sake and a little sugar. No bottled teriyaki needed, and the homemade version is miles better.

Serve it over steamed rice with the pan sauce spooned over the top, and you've got a weeknight dinner the whole family will ask for again.

Pantry bits

  • Large non-stick frying pan
  • Small mixing bowl
  • Fish slice or spatula
  • Fine grater (for ginger and garlic)

Ingredients

  • 4 salmon fillets (about 150g each), skin on
  • 60ml (1/4 cup) soy sauce
  • 60ml (1/4 cup) mirin
  • 2 tbsp sake (or dry sherry)
  • 1 tbsp caster sugar
  • 2 tsp finely grated fresh ginger
  • 1 garlic clove, finely grated
  • 1 tbsp vegetable oil
  • 2 spring onions, thinly sliced
  • 1 tsp toasted sesame seeds
  • Steamed rice, to serve

Instructions

  1. Pat the salmon fillets dry with paper towel. Dry fish means a better sear and a sauce that clings properly.
  2. Stir together the soy sauce, mirin, sake, sugar, ginger and garlic in a small bowl until the sugar dissolves.
  3. Heat the oil in a large non-stick frying pan over medium-high heat. Add the salmon skin-side down and cook for 3-4 minutes until the skin is crisp.
  4. Flip the salmon and cook for a further 2 minutes, then carefully pour off any excess oil from the pan.
  5. Pour in the teriyaki sauce and let it bubble for 2-3 minutes, spooning it over the salmon as it thickens to a glossy glaze.
  6. Remove the pan from the heat as soon as the sauce coats the back of a spoon - it will keep thickening as it cools.
  7. Serve the salmon over steamed rice, drizzle with the pan sauce and scatter with spring onion and sesame seeds.
