Tempe Orek (Sweet Soy Tempeh)

Tempe orek is one of Indonesia's best-loved everyday dishes, a staple of nasi campur plates and lunchtime warungs across Java. Strips of tempeh are fried until golden and crunchy, then tossed through a sticky glaze of kecap manis, chilli and aromatics.

It hits every note at once: sweet, salty, a little fiery, and seriously moreish. Even people who reckon they don't like tempeh tend to change their minds after a plate of this.

It's cheap, quick and naturally vegan, and tempeh is easy to find in Australian supermarkets these days. Serve it with rice and greens for dinner, or keep a container in the fridge for snacking.

Pantry bits

  • Wok or large frying pan
  • Slotted spoon
  • Chopping board and sharp knife
  • Paper towel for draining

Ingredients

  • 300g tempeh, cut into thin batons
  • Vegetable oil, for shallow-frying
  • 3 cloves garlic, thinly sliced
  • 4 shallots (eschalots), thinly sliced
  • 2 long red chillies, sliced on the diagonal
  • 2 kaffir lime leaves, torn
  • 1cm piece galangal or ginger, bruised
  • 3 tbsp kecap manis
  • 1 tsp tamarind puree
  • 1 tbsp palm sugar or brown sugar
  • 1/4 tsp salt
  • 2 tbsp water

Instructions

  1. Heat 1cm of oil in a wok over medium-high heat. Shallow-fry the tempeh batons in two batches for 3 to 4 minutes until golden and crisp, then drain on paper towel.
  2. Pour off all but 1 tablespoon of oil. Add the garlic, shallots and chillies and fry for 1 to 2 minutes until softened and fragrant.
  3. Add the lime leaves and galangal and stir for 30 seconds.
  4. Add the kecap manis, tamarind, sugar, salt and water and let it bubble for a minute until thick and syrupy.
  5. Return the tempeh to the wok and toss quickly so every piece is coated in the sticky glaze.
  6. Cook for another minute until the glaze clings and the edges catch slightly, then remove the galangal.
  7. Serve warm or at room temperature with steamed rice.
