Tahu telur is street food from East Java, especially Surabaya, where warung cooks fry a tall, fluffy tofu and egg omelette in a small wok, then bury it under bean sprouts, peanut sauce, sweet soy and crispy shallots.
It's a lovely contrast of textures: soft tofu, crisp edges, crunchy sprouts and a rich, sweet-savoury sauce. It works as a light dinner with rice or on its own with a few prawn crackers.
Adaptation note: traditional peanut sauce is made by pounding fried peanuts with garlic, chilli and petis (a black fermented shrimp paste). To keep this to 25 minutes we use natural peanut butter and leave the petis out.
