Sweet and Sour Pork

Sweet and sour pork is the dish that made a generation of Australians fall in love with Chinese food — golden battered pork tossed with capsicum and pineapple in that glossy, tangy-sweet sauce. It's pure nostalgia on a plate.

Making it at home means the batter stays properly crisp, the sauce isn't gluggy, and you can load in as much pineapple as you like. The double-fry might sound fussy, but it's five extra minutes for crunch that survives the sauce.

This is Friday night fakeaway at its finest. Serve it with steamed rice and watch it disappear.

Ingredients

  • 600g pork scotch fillet or shoulder, cut into 3cm pieces
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 3/4 cup cornflour, plus 2 tsp extra for the sauce
  • 1/4 cup plain flour
  • 1 egg, lightly beaten
  • 1/2 cup chilled soda water
  • Vegetable oil, for deep-frying
  • 1 red capsicum, cut into 3cm pieces
  • 1 green capsicum, cut into 3cm pieces
  • 1 brown onion, cut into wedges
  • 440g can pineapple pieces in juice, drained (juice reserved)
  • 1/3 cup tomato sauce (ketchup)
  • 1/4 cup rice vinegar (or white vinegar)
  • 1/4 cup caster sugar
  • 1 tbsp soy sauce (for the sauce)

Instructions

  1. Toss the pork with 1 tablespoon each of soy sauce and Shaoxing wine and set aside for 15 minutes.
  2. Make the sauce: whisk the reserved pineapple juice, tomato sauce, vinegar, sugar, 1 tablespoon of soy sauce and 2 teaspoons of cornflour in a jug.
  3. Whisk 3/4 cup of cornflour, the plain flour, egg and soda water into a thick batter. Heat oil for deep-frying in a wok or large saucepan to 180°C.
  4. Coat the pork pieces in batter and fry in batches for 4-5 minutes until pale golden. Drain on a wire rack.
  5. Increase the oil to 190°C and fry the pork a second time, in batches, for 1-2 minutes until deep golden and very crisp. Drain again.
  6. Pour off all but 1 tablespoon of oil. Over high heat, stir-fry the onion and capsicum for 2-3 minutes until slightly charred but still crisp.
  7. Pour in the sauce and simmer for 1-2 minutes until glossy and thickened, then stir through the pineapple.
  8. Add the crispy pork, toss quickly to coat and serve immediately with steamed rice.
