Steamed Pork Ribs with Black Bean (Pai Gwat)

These are the small saucers of ribs that come round on the yum cha trolley, and they are one of the easiest dim sum items to make at home because there is no wrapping and no frying. Everything goes into one bowl, sits for a while, then steams.

Fermented black beans do the heavy lifting. Rinse them first to knock the salt back, chop them roughly so you get pockets of flavour, and spread the ribs out in a single layer so they cook evenly.

Ingredients

  • 700g pork spare ribs, chopped into 3cm pieces
  • 2 tbsp fermented black beans, rinsed and roughly chopped
  • 4 garlic cloves, finely chopped
  • 2cm piece ginger, finely grated
  • 1 long red chilli, sliced
  • 1 tbsp light soy sauce
  • 1 tbsp Shaoxing wine
  • 2 tsp caster sugar
  • 1 tbsp cornflour
  • 1 tbsp neutral oil
  • 1/2 tsp ground white pepper
  • 2 spring onions, sliced, to serve

Instructions

  1. Rinse the ribs in cold water, then soak them for 10 minutes and drain well. This keeps the steamed sauce clean rather than cloudy.
  2. Pat dry and toss with the black beans, garlic, ginger, chilli, soy, Shaoxing, sugar, cornflour, oil and white pepper. Use your hands and work it in properly.
  3. Leave to marinate for at least 15 minutes, or cover and refrigerate for a few hours if you have time.
  4. Spread the ribs in a single shallow layer on a heatproof dish. Piled up they steam unevenly.
  5. Steam over rapidly boiling water for 15 minutes, until the meat pulls back from the bone and the sauce has thickened around it.
  6. Scatter with spring onion and serve straight from the dish with rice.
