Shogayaki (Japanese Ginger Pork)

Shogayaki is a Japanese lunch counter classic: thinly sliced pork flash-fried in a sauce that's all about fresh ginger, backed up by soy, mirin and a touch of sweetness. It's savoury, warming and seriously moreish.

The whole thing cooks in under ten minutes, which makes it one of the fastest genuinely impressive dinners you can put on the table. The key is slicing the pork thinly so it cooks fast and drinks up the sauce.

Serve it the traditional way with steamed rice and a pile of shredded cabbage to freshen every bite.

Pantry bits

  • Large frying pan
  • Sharp knife and chopping board
  • Fine grater (for ginger and garlic)
  • Small mixing bowl
  • Tongs

Ingredients

  • 500g pork loin steaks or pork scotch, very thinly sliced
  • 2 tbsp finely grated fresh ginger (with its juice)
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sake (or water)
  • 2 tsp caster sugar
  • 1 garlic clove, finely grated
  • 1 tbsp plain flour
  • 1 tbsp vegetable oil
  • 1 brown onion, halved and thinly sliced
  • 1/4 green cabbage, very finely shredded
  • Steamed short-grain rice, to serve

Instructions

  1. Freeze the pork for 20 minutes first if you can - it makes slicing it thinly (about 5mm) much easier.
  2. Stir together the ginger, soy sauce, mirin, sake, sugar and garlic in a small bowl.
  3. Toss the pork slices with the flour until lightly dusted - this helps the sauce cling and thicken.
  4. Heat the oil in a large frying pan over high heat. Add the onion and cook for 2 minutes until starting to soften.
  5. Add the pork in a single layer and cook for 2-3 minutes, turning once, until just cooked through and lightly browned in spots.
  6. Pour in the ginger sauce and toss everything for 1-2 minutes until the sauce bubbles, thickens slightly and coats the pork.
  7. Serve immediately with steamed rice and a generous handful of shredded cabbage on the side, spooning any pan sauce over the pork.
