Shaking Beef (Bo Luc Lac)

Bo luc lac — shaking beef — gets its name from the way the pan is shaken as cubes of beef sear over high heat. It's a Vietnamese favourite with French roots: tender steak, a glossy savoury-sweet glaze, and a pile of peppery watercress underneath.

The beef is caramelised on the outside and pink in the middle, and each bite gets dragged through a sharp little dip of lime juice, salt and pepper. It sounds fancy, but it's really just a very good, very fast stir-fry.

From chopping board to table in under half an hour, this is the dish to make when you want something impressive without any fuss.

Ingredients

  • 700g beef rump or sirloin, cut into 3cm cubes
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp white sugar
  • 4 garlic cloves, finely chopped
  • 2 tbsp vegetable oil
  • 20g butter
  • 1 small red onion, thinly sliced
  • 1 bunch watercress or rocket, washed and trimmed
  • 2 tomatoes, cut into wedges
  • 1 lime, juiced
  • 1 tsp sea salt flakes
  • 1 tsp freshly ground black pepper
  • Steamed rice, to serve

Instructions

  1. Combine the beef with the oyster sauce, soy sauce, fish sauce, sugar and half the garlic. Marinate for 15 minutes at room temperature.
  2. Make the dipping sauce by stirring the lime juice, salt and pepper together in a small bowl. Arrange the watercress and tomato wedges on a serving platter.
  3. Heat a wok or large heavy frying pan over the highest heat until smoking. Add 1 tablespoon of the oil.
  4. Add half the beef in a single layer and leave it untouched for 1 minute to caramelise, then shake and toss the pan for another 1-2 minutes until browned all over but still pink inside. Remove and repeat with the remaining oil and beef.
  5. Return all the beef to the wok with the butter, remaining garlic and the red onion. Toss for 1 minute until glossy and fragrant.
  6. Tip the beef and all its pan juices over the watercress and tomatoes — the leaves will wilt slightly in the heat.
  7. Serve straight away with steamed rice and the lime-pepper sauce for dipping.
