San Bei Ji (Three Cup Chicken)

The three cups are sesame oil, soy sauce and rice wine, used in roughly equal measure with no water at all. As the chicken cooks they reduce onto the meat until every piece is coated in something dark, salty and faintly sweet.

Fry the ginger slowly at the start until the edges crisp: it is what gives the dish its backbone. The basil goes in off the heat at the very end so it wilts in the residual steam rather than turning black.

Ingredients

  • 1kg chicken thighs and drumsticks, chopped through the bone into chunks
  • 60ml sesame oil (not toasted, or half toasted half neutral)
  • 8cm piece ginger, thinly sliced
  • 8 garlic cloves, peeled and left whole
  • 60ml Shaoxing wine
  • 60ml light soy sauce
  • 1 tbsp rock sugar or caster sugar
  • 2 long red chillies, halved
  • 4 spring onions, cut into 5cm lengths
  • 2 large handfuls Thai basil leaves
  • Steamed rice, to serve

Instructions

  1. Heat the sesame oil in a clay pot or heavy casserole over medium heat. Add the ginger slices and fry slowly for 3 to 4 minutes until the edges curl and go slightly crisp.
  2. Add the whole garlic cloves and chilli and fry for 2 minutes more until the garlic is golden.
  3. Turn the heat up, add the chicken and brown for 5 minutes, turning the pieces so they colour on all sides.
  4. Add the Shaoxing, soy and sugar. Bring to a boil, then cover and simmer over low heat for 12 minutes.
  5. Uncover and raise the heat for 5 minutes, turning the chicken, until the sauce reduces to a thick glaze that coats every piece.
  6. Throw in the spring onions and basil, put the lid back on and leave it off the heat for 1 minute so the basil wilts in the steam. Serve from the pot with rice.
