Salmon Poke Bowl

A poke bowl is really just a dressing decision. Soy, sesame oil and a little sugar is the version that lets the fish taste like fish, and it takes about a minute to whisk together.

Everything else is assembly. Buy the best salmon you can, cut it into proper cubes rather than slices, and let it sit in the dressing while you slice the vegetables.

Ingredients

  • 300g sashimi-grade salmon, cut into 2cm cubes
  • 2 cups cooked short-grain rice, warm
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp caster sugar
  • 1 avocado, sliced
  • ½ Lebanese cucumber, thinly sliced
  • 2 spring onions, sliced
  • 2 tbsp Kewpie mayonnaise
  • 1 tsp sriracha
  • 1 tbsp furikake
  • 1 sheet nori, shredded

Instructions

  1. Whisk the soy sauce, sesame oil, rice vinegar and sugar together in a bowl until the sugar dissolves.
  2. Add the salmon cubes and turn gently to coat. Leave for 10 minutes in the fridge while you prepare everything else.
  3. Mix the Kewpie and sriracha together in a small bowl.
  4. Divide the warm rice between two bowls.
  5. Spoon the salmon over the rice with a little of its dressing, then arrange the avocado and cucumber alongside.
  6. Drizzle over the sriracha mayo, then scatter with spring onion, furikake and shredded nori.

Notes:

  • Use fish sold specifically for raw eating, keep it cold, and eat it the day you buy it
  • Warm rice against cold fish is the contrast that makes a poke bowl work
  • Ten minutes in the dressing is plenty — much longer and the soy starts to cure the surface
