Salmon Kabayaki Don (Japanese Glazed Salmon Rice Bowl)

Kabayaki is the grilling style Japan reserves for eel - split, skewered and brushed again and again with a sweet soy glaze until it shines. Salmon takes to exactly the same treatment, and it costs a fraction of what unagi does.

The trick is patience with the glaze. You brush, let it catch, then brush again, building three or four thin layers so the fish ends up lacquered rather than swimming in sauce. Sansho pepper over the top is not optional - that citrus tingle is what stops the whole bowl tasting simply sweet.

It is a twenty-minute dinner that eats like a restaurant meal. Put the rice on first, and everything else falls into place around it.

Ingredients

  • 2 salmon fillets, skin on, about 180g each
  • 2 tsp sake
  • Pinch of salt
  • 1 tsp neutral oil
  • 4 tbsp kabayaki sauce
  • 1 tbsp mirin
  • 2 cups hot steamed Japanese short-grain rice
  • 1/2 tsp sansho pepper
  • 1 spring onion, finely sliced
  • 1 tsp toasted white sesame seeds
  • Pickled ginger, to serve

Instructions

  1. Pat the salmon dry, rub with the sake and a pinch of salt, and leave for 10 minutes. Pat dry again.
  2. Heat the oil in a non-stick frying pan over medium heat. Cook the salmon skin side down for 4-5 minutes, pressing gently so the skin crisps evenly.
  3. Turn the fillets and cook for a further 2 minutes. Tip out any excess oil from the pan.
  4. Combine the kabayaki sauce and mirin, then spoon a third of it over the fish. Let it bubble and thicken for 30 seconds, spooning it over the fillets.
  5. Repeat twice more, allowing the glaze to reduce and darken between each layer, until the salmon is glossy and just cooked through.
  6. Divide the hot rice between two deep bowls and spoon over a little of the pan glaze.
  7. Sit the salmon on top, spoon over the remaining glaze, then dust with sansho pepper and scatter with spring onion and sesame seeds. Serve with pickled ginger on the side.
