Rau Muong Xao Toi (Stir-Fried Water Spinach with Garlic)

Ask anyone who's travelled through Vietnam about their favourite vegetable dish and rau muong xao toi will come up every time. Water spinach (also sold as morning glory, kang kong or ong choy) is flash-fried with a generous amount of garlic until the leaves wilt and the hollow stems stay delightfully crunchy.

It's salty, garlicky and just a little smoky from the hot wok, and it's the side that makes any Vietnamese meal feel complete.

The whole dish takes about three minutes of actual cooking, so have everything chopped and ready by the stove before you start. Water spinach is easy to find at Asian grocers and many greengrocers around Australia.

Pantry bits

  • Wok (or large heavy frying pan)
  • Wok spatula or tongs
  • Small bowl for the sauce
  • Colander

Ingredients

  • 2 bunches water spinach (about 600g)
  • 6 garlic cloves, roughly chopped
  • 2 tbsp neutral oil
  • 1 tbsp fish sauce
  • 1 tsp oyster sauce
  • 1/2 tsp white sugar
  • 2 tbsp water or chicken stock
  • Pinch of white pepper
  • 1 small red chilli, sliced (optional)
  • Squeeze of lime, to serve (optional)

Instructions

  1. Wash the water spinach well and shake dry. Trim off the tough bottom 5cm of the stems, then cut the rest into 8-10cm lengths, keeping stems and leaves roughly separated.
  2. Mix the fish sauce, oyster sauce, sugar and water in a small bowl so it's ready to pour.
  3. Heat a wok over the highest heat until it just starts to smoke, then add the oil and immediately toss in the garlic. Stir for 10-15 seconds until golden and fragrant; don't let it burn.
  4. Add the water spinach stems and stir-fry for about 1 minute, keeping everything moving.
  5. Add the leaves and the chilli, if using, and toss for another 30 seconds until the leaves begin to wilt.
  6. Pour in the sauce around the edge of the wok and toss for a final 30-60 seconds; the stems should still have a good crunch.
  7. Finish with white pepper and a squeeze of lime, and serve immediately while it's hot and glossy.
