Prawn Tempura

Prawn tempura is Japanese frying at its most elegant — plump, sweet prawns in a whisper-thin batter that shatters when you bite into it. Dunked into a warm soy and dashi dipping sauce with a little grated daikon, it's restaurant food you can absolutely pull off at home.

The secret to that famously light, lacy batter is no secret at all: icy cold soda water, minimal mixing (lumps are your friend), and hot oil. Get those three things right and you'll wonder why you ever paid restaurant prices.

Serve it as a starter, over rice as tendon, or alongside a bowl of udon. Either way, eat it the moment it comes out of the oil — that's when tempura is at its best.

Ingredients

  • 16 large green prawns, peeled and deveined, tails intact
  • 1 cup plain flour, plus extra for dusting
  • 1/4 cup cornflour
  • 1 egg, chilled
  • 250ml icy cold soda water
  • Vegetable oil, for deep-frying
  • 250ml dashi stock (1 tsp dashi powder dissolved in 250ml hot water)
  • 60ml soy sauce
  • 60ml mirin
  • 3 tbsp finely grated daikon radish
  • Steamed rice, to serve (optional)

Instructions

  1. Make the dipping sauce first. Combine the dashi stock, soy sauce and mirin in a small saucepan, bring to a simmer, then set aside and keep warm.
  2. Prepare the prawns: make 3-4 shallow cuts along the underside of each prawn, then press gently along the back to straighten them. This stops them curling as they fry.
  3. Pour vegetable oil into a deep heavy-based saucepan or wok to a depth of 6cm and heat to 180°C.
  4. Just before frying, make the batter. Lightly whisk the cold egg with the soda water, then add the flour and cornflour and stir briefly with chopsticks — it should stay lumpy. Overmixing makes the batter heavy.
  5. Dust the prawns lightly in extra flour, then hold each one by the tail and dip into the batter, letting the excess drip off.
  6. Fry 4-5 prawns at a time for 2-3 minutes until the batter is crisp and very pale gold. Drain on a wire rack and skim any stray batter bits from the oil between batches.
  7. Serve immediately with the warm dipping sauce, adding a little grated daikon to each dipping bowl, with steamed rice on the side if you like.
