Pork and Chive Dumplings (Jiaozi)

There's something deeply satisfying about a plate of homemade jiaozi — juicy pork and garlic chive dumplings with wrappers that are silky when boiled or golden-bottomed when pan-fried. In Chinese households they're a food for gathering, with everyone pitching in around the table to fold.

Store-bought wrappers make these completely achievable on a weeknight, and the filling is a simple mix you can stir together in five minutes. The folding takes a little practice, but even wonky dumplings taste brilliant.

They freeze perfectly too. Lay spares on a tray until solid, bag them up, and you've got a stash that cooks straight from frozen whenever you need it.

Ingredients

  • 40 round dumpling (gow gee) wrappers
  • 500g pork mince (not too lean)
  • 1 bunch garlic chives, finely chopped (about 1 cup)
  • 1 tbsp finely grated ginger
  • 2 garlic cloves, finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)
  • 2 tsp sesame oil
  • 1/2 tsp white pepper
  • 1/2 tsp salt
  • 3 tbsp chicken stock or water
  • 2 tbsp vegetable oil (for pan-frying)
  • 1/4 cup Chinese black vinegar (or rice vinegar), for dipping
  • 1 tbsp chilli oil, for dipping (optional)

Instructions

  1. Put the pork, garlic chives, ginger, garlic, soy sauce, Shaoxing wine, sesame oil, white pepper and salt in a large bowl. Stir vigorously in one direction with chopsticks or a fork, gradually adding the stock, until the mixture is sticky and well combined.
  2. Place a heaped teaspoon of filling in the centre of a wrapper. Wet the edge with a fingertip dipped in water, fold into a half-moon and pinch firmly to seal, pleating the front edge if you like. Sit on a lightly floured tray and repeat.
  3. To boil: cook dumplings in a large pot of boiling water for 6-7 minutes, until they float and the filling is cooked through. Lift out with a slotted spoon.
  4. To pan-fry (potstickers): heat the vegetable oil in a large non-stick frying pan over medium-high heat. Add the dumplings flat-side down and fry for 2 minutes until golden underneath.
  5. Carefully pour in 1/2 cup of water, cover immediately and steam for 6-7 minutes until the water has evaporated and the filling is cooked.
  6. Uncover and cook for 1 more minute to re-crisp the bases.
  7. Mix the black vinegar with chilli oil, if using, and serve the dumplings hot with the dipping sauce.
