Pla Nueng Manao (Thai Steamed Fish with Lime and Garlic)

This is the fish dish every Thai seafood restaurant is judged on. The fish is steamed plainly over lemongrass, and all the noise comes from a raw sauce of lime juice, garlic, chilli and fish sauce poured over it at the last second.

Because the sauce is never cooked it stays sharp and alive, which is what cuts through the richness of the fish. Use more garlic than feels sensible and taste the sauce before it goes on; it should make you flinch slightly.

Ingredients

  • 1 whole snapper or barramundi, about 800g, cleaned and scored
  • 2 lemongrass stalks, bruised
  • 4 slices ginger
  • 6 garlic cloves, finely chopped
  • 4 to 6 birds eye chillies, finely chopped
  • 4 tbsp lime juice
  • 2 tbsp fish sauce
  • 2 tsp caster sugar
  • 125ml hot chicken stock
  • 1 bunch coriander, leaves and chopped stems
  • 2 spring onions, sliced
  • 1 bunch bok choy or Chinese broccoli, to serve

Instructions

  1. Lay the lemongrass and ginger on a heatproof plate and sit the fish on top. Set the plate in a steamer over rapidly boiling water.
  2. Steam, covered, for 10 to 12 minutes, until the flesh at the thickest part comes away from the bone easily.
  3. While it steams, stir the garlic, chilli, lime juice, fish sauce, sugar, hot stock and chopped coriander stems together. Taste and balance it, then set aside.
  4. Blanch the greens in the steamer for the last 2 minutes, or in a saucepan alongside.
  5. Lift the fish onto a serving platter, pour the sauce over the whole thing, scatter with coriander leaves and spring onion and serve immediately with the greens and steamed rice.
