Pho Ga (Vietnamese Chicken Noodle Soup)

Pho ga is the gentler, lighter cousin of beef pho, and plenty of Vietnamese families would argue it's the better one. The broth is clear and golden, perfumed with charred ginger, onion and star anise, and it lets the chicken do the talking.

It's the bowl you order when you want something soothing rather than heavy, and it's surprisingly forgiving to make at home. There's no long list of beef bones to track down; a good free-range chook and a handful of spices will get you most of the way there.

Once the broth is simmering, the rest is just assembly: noodles, poached chicken, a shower of herbs and a squeeze of lime at the table. It tastes like a proper Vietnamese restaurant bowl, made in your own kitchen.

Pantry bits

  • Large stockpot (at least 6 litres)
  • Fine sieve or muslin cloth
  • Tongs
  • Large noodle bowls

Ingredients

  • 1 whole free-range chicken (about 1.6kg)
  • 2 brown onions, halved, skin on
  • 1 large knob ginger (about 80g), halved lengthways
  • 3 whole star anise
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 tbsp coriander seeds
  • 2 tbsp fish sauce, plus extra to serve
  • 1 tbsp rock sugar or white sugar
  • 2 tsp salt
  • 400g dried flat rice noodles (banh pho)
  • 3 spring onions, thinly sliced
  • 1 cup bean sprouts
  • 1 bunch each of coriander and Thai basil
  • 1 lime, cut into wedges
  • 1 long red chilli, sliced

Instructions

  1. Char the onion halves and ginger over a gas flame or under a hot grill until blackened in spots, about 5 minutes. This gives the broth its signature smoky sweetness.
  2. Toast the star anise, cinnamon, cloves and coriander seeds in a dry pan for 1-2 minutes until fragrant, then tie them in a piece of muslin or pop them in a spice ball.
  3. Place the chicken in a large stockpot with the charred onion, ginger and spice bundle. Cover with about 3 litres of cold water, bring to the boil, then skim off any foam.
  4. Reduce to a gentle simmer, add the fish sauce, sugar and salt, and cook for 30 minutes. Lift out the chicken, plunge it briefly into cold water, and set aside to cool.
  5. Keep the broth simmering gently, uncovered, for another 30 minutes to deepen the flavour, then strain and taste, adjusting with extra fish sauce if needed.
  6. Shred the chicken meat, discarding the skin and bones (or return the bones to the pot while it simmers for extra body).
  7. Cook the rice noodles according to packet directions, then rinse briefly and divide between four bowls.
  8. Top the noodles with shredded chicken and spring onion, ladle over the hot broth, and serve with bean sprouts, herbs, lime wedges and chilli on the side.
