Okonomiyaki (Japanese Savoury Pancake)

Okonomiyaki roughly translates to "grilled as you like it", and that's the whole spirit of this beloved Japanese savoury pancake. A simple batter holds together a mountain of shredded cabbage and spring onion, topped with crispy bacon and finished with sweet-savoury okonomiyaki sauce, Kewpie mayo and bonito flakes.

Every bite is a mix of textures — golden crust on the outside, tender cabbage inside, salty bacon on top, and that unmistakable sauce combo that makes okonomiyaki so addictive.

At home, all you need is a frying pan and a mixing bowl. It's a brilliant way to use up half a cabbage, it's on the table in about half an hour, and kids love watching the bonito flakes wave about on top.

Ingredients

  • 1 cup plain flour
  • 1/2 tsp salt
  • 185ml chicken stock or dashi stock, chilled
  • 3 eggs
  • 400g cabbage (about 1/4 large cabbage), finely shredded
  • 3 spring onions, thinly sliced
  • 200g streaky bacon rashers, halved
  • 2 tbsp vegetable oil
  • 1/4 cup okonomiyaki sauce (or 2 tbsp tomato sauce mixed with 1 1/2 tbsp Worcestershire sauce and 2 tsp honey)
  • Kewpie mayonnaise, for drizzling
  • Bonito flakes, to serve
  • Aonori (dried seaweed flakes) or finely sliced nori, to serve

Instructions

  1. Whisk the flour, salt, stock and eggs in a large bowl until you have a smooth batter.
  2. Add the shredded cabbage and most of the spring onion (save some for serving) and fold through until everything is well coated — it will look mostly like cabbage, and that's exactly right.
  3. Heat 1 tablespoon of oil in a large non-stick frying pan over medium heat. Spoon in half the mixture and gently shape into a round about 20cm wide and 2cm thick. Lay half the bacon over the top.
  4. Cook for 4-5 minutes until the base is deep golden, then carefully flip using a large spatula (or slide it onto a plate and invert it back into the pan). Cook the bacon side for another 4-5 minutes until crisp and the pancake is cooked through.
  5. Flip once more so the bacon is on top, cook for 1 more minute, then slide onto a plate. Repeat with the remaining oil, batter and bacon for the second pancake.
  6. Drizzle generously with okonomiyaki sauce and Kewpie mayonnaise, zig-zagging across the top.
  7. Scatter over the bonito flakes, aonori and reserved spring onion. Cut into wedges and serve hot.
