Ojingeo Muchim (Korean Spicy Squid Salad)

Where ojingeo bokkeum is fried hard in a wok, muchim means dressed. The squid is poached for barely two minutes, cooled, and tossed raw-style through a bright red dressing with a bowl of crisp vegetables.

It is one of the best warm-weather Korean dishes: high in protein, very low in fat, and loud with vinegar, garlic and chilli. The pear is worth including, as its sweetness stops the dressing from tasting only sharp.

Ingredients

  • 500g cleaned squid tubes, scored and cut into strips
  • 1 tbsp rice vinegar, for the poaching water
  • 2 tbsp gochujang
  • 1 tbsp gochugaru
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tbsp caster sugar
  • 3 garlic cloves, finely grated
  • 1 tbsp sesame oil
  • 2 Lebanese cucumbers, sliced on an angle
  • 1/2 red onion, thinly sliced
  • 1/2 nashi pear or green apple, julienned
  • 4 spring onions, cut into 4cm lengths
  • 1 tbsp toasted sesame seeds

Instructions

  1. Bring a saucepan of water to the boil with the tablespoon of vinegar. Drop in the squid and cook for 90 seconds to 2 minutes, until it turns opaque and curls. Any longer and it toughens.
  2. Drain the squid and spread it on a tray to cool quickly, or plunge it into iced water and drain well.
  3. Whisk the gochujang, gochugaru, vinegar, soy, sugar, garlic and sesame oil together in a large bowl.
  4. Add the cooled squid, cucumber, onion, pear and spring onions and toss thoroughly with your hands or tongs so everything is evenly coated.
  5. Scatter with sesame seeds and serve straight away, while the vegetables are still crisp. It is good on its own or over cold rice noodles.
