Nikujaga (Japanese Beef and Potato Stew)

Nikujaga - literally 'meat and potatoes' - is the dish Japanese home cooks make when they want comfort in a bowl. Thin slices of beef simmer with potatoes, carrot and onion in a gently sweet broth of dashi, soy and mirin.

The potatoes soak up the broth as they soften, going almost creamy at the edges, and the whole pot tastes even better the next day. It's the kind of dish nobody makes a fuss over in Japan because everyone's mum makes it.

There's nothing tricky here - it's a one-pot simmer that mostly looks after itself.

Pantry bits

  • Large saucepan or deep frying pan with lid
  • Baking paper (for a drop lid)
  • Sharp knife and chopping board
  • Vegetable peeler
  • Ladle

Ingredients

  • 400g beef rump or sirloin, very thinly sliced (or pre-sliced sukiyaki beef)
  • 1 tbsp vegetable oil
  • 1 large brown onion, cut into thick wedges
  • 600g washed potatoes, peeled and cut into large chunks
  • 1 large carrot, cut into chunky pieces
  • 500ml (2 cups) dashi stock (2 tsp dashi powder dissolved in hot water)
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 2 tbsp sake (or water)
  • 1 1/2 tbsp caster sugar
  • 100g green beans, trimmed and halved
  • Steamed rice, to serve

Instructions

  1. Heat the oil in a large saucepan or deep frying pan over medium-high heat. Add the beef and cook for 1-2 minutes until it just loses its pink colour, then set aside on a plate.
  2. Add the onion, potato and carrot to the same pot and stir for 2 minutes to coat in the flavoured oil.
  3. Pour in the dashi, soy sauce, mirin, sake and sugar and bring to a simmer, skimming off any foam that rises.
  4. Place a smaller lid or a round of baking paper directly on the surface (a drop lid), reduce the heat to low and simmer for 15 minutes.
  5. Return the beef to the pot along with the green beans and simmer for a further 5-7 minutes, until the potatoes are tender when poked with a skewer.
  6. Turn off the heat and let the pot rest for 5 minutes - the vegetables absorb more flavour as it sits.
  7. Ladle into bowls with plenty of broth and serve with steamed rice on the side.
