Muc Xao Can Tay (Vietnamese Squid Stir Fry with Celery)

Squid and celery is a combination that sounds odd until you have eaten it. The celery goes in late so it stays loud and crunchy, and it cuts straight through the richness of the squid.

The trick is heat and speed. Squid turns to rubber if you let it sit in the pan, so everything is prepped before the wok goes on and the whole stir fry is over in about three minutes.

Plenty of black pepper at the end is not optional. It is the backbone of the dish.

Ingredients

  • 500g cleaned squid tubes and tentacles
  • 1 tsp cornflour
  • 2 tbsp vegetable oil
  • 4 garlic cloves, finely chopped
  • 1 brown onion, cut into thin wedges
  • 3 celery stalks, cut on the angle into 2cm pieces, leaves reserved
  • 1 long red chilli, sliced
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp caster sugar
  • 1/2 tsp freshly ground black pepper
  • 1 tbsp lime juice
  • 2 spring onions, cut into 3cm lengths
  • Steamed rice, to serve

Instructions

  1. Cut the squid tubes open along one side and score the inside in a light diamond pattern, then cut into pieces about 4cm wide. Leave the tentacles whole.
  2. Pat the squid very dry and toss it with the cornflour. Dry squid is the difference between searing and steaming.
  3. Stir the fish sauce, oyster sauce, sugar and lime juice together in a small bowl.
  4. Heat a wok over the highest heat you have until it is smoking. Add half the oil, then the squid in a single layer. Leave it for 45 seconds, toss once, then cook for another 45 seconds until it curls and turns opaque. Tip it out onto a plate.
  5. Add the rest of the oil to the wok with the garlic, onion and chilli. Stir fry for a minute, until the onion edges catch.
  6. Add the celery and stir fry for 1 minute more. It should still squeak when you bite it.
  7. Return the squid to the wok, pour in the sauce and toss hard for 30 seconds so everything is coated.
  8. Grind over the black pepper, add the spring onions and celery leaves, toss once and get it straight onto the table with rice.
