Moo Goo Gai Pan (Chicken with Mushrooms and Vegetables)

Moo goo gai pan is the gentlest thing on a Cantonese takeaway menu and, done properly, one of the best. No dark sauce, no sugar, just chicken and mushrooms in a light garlic and ginger gravy that lets the vegetables taste like themselves.

The velveting step is what separates a good version from a rubbery one. Two minutes with cornflour and egg white gives the chicken breast a silky coat that keeps it tender through the heat of the wok.

Ingredients

  • 500g chicken breast, thinly sliced
  • 1 egg white
  • 1 tbsp cornflour, plus 2 tsp extra
  • 2 tbsp neutral oil
  • 3 garlic cloves, sliced
  • 3cm piece ginger, julienned
  • 200g button or Swiss brown mushrooms, sliced
  • 150g snow peas, trimmed
  • 1 tin water chestnuts (225g), drained and sliced
  • 1 head bok choy, leaves separated
  • 250ml chicken stock
  • 1 tbsp Shaoxing wine
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil and white pepper

Instructions

  1. Toss the chicken with the egg white, 1 tbsp cornflour and a pinch of salt and leave for 5 minutes while you prepare the vegetables.
  2. Mix the extra 2 tsp cornflour with 2 tbsp cold water to make a slurry, and have the stock, Shaoxing and soy measured and ready.
  3. Heat the oil in a wok over high heat. Add the chicken in a single layer, leave it 1 minute to colour, then stir fry for another minute until almost cooked and lift it out.
  4. Add the garlic, ginger and mushrooms to the wok and stir fry for 2 minutes, then add the snow peas, water chestnuts and bok choy and toss for 1 minute.
  5. Pour in the stock, Shaoxing and soy, bring to a boil, return the chicken, then stir in the slurry and cook for 1 minute until the sauce turns glossy and just coats everything. Finish with sesame oil and white pepper.
