Miso Soup with Tofu and Wakame

Miso soup is the quiet hero of every Japanese meal - that steaming little bowl of savoury broth dotted with silky tofu and tender wakame seaweed. It's the first thing that lands on the table at your local Japanese restaurant, and it's absurdly easy to make at home.

All you need is dashi stock, good miso paste and a couple of minutes at the stove. The only rule worth remembering: never boil the soup once the miso goes in, or you'll dull its lovely flavour.

Make it as a starter, a side for any of our Japanese mains, or a light lunch on its own.

Pantry bits

  • Medium saucepan
  • Ladle
  • Small sieve (for dissolving miso)
  • Small bowl (for soaking wakame)
  • Sharp knife and chopping board

Ingredients

  • 1 litre (4 cups) water
  • 2 tsp dashi powder (or 1 litre prepared dashi stock)
  • 3 tbsp miso paste (white or a white-red blend)
  • 200g silken tofu, cut into 1.5cm cubes
  • 2 tbsp dried wakame seaweed
  • 2 spring onions, thinly sliced
  • 1 tsp soy sauce (optional, to taste)
  • A few drops of sesame oil (optional)

Instructions

  1. Put the dried wakame in a small bowl of cold water for 5 minutes to rehydrate, then drain.
  2. Bring the water and dashi powder to a gentle simmer in a saucepan over medium heat.
  3. Reduce the heat to low. Put the miso paste in a ladle or small sieve, lower it into the broth and stir until the miso fully dissolves - this stops lumps forming.
  4. Add the tofu cubes and rehydrated wakame and warm through gently for 2 minutes. Do not let the soup boil once the miso is in.
  5. Taste and add a splash of soy sauce if you'd like it a little deeper in flavour.
  6. Ladle into small bowls, scatter with spring onion, add a drop of sesame oil if using, and serve hot.
