Mayak Eggs (Korean Marinated Eggs)

These are the marinated eggs that turn up all over Korean home cooking and, more recently, all over the internet. Six-and-a-half-minute eggs peeled and left to sit in a sweet soy marinade loaded with raw garlic, chilli and spring onion.

The work is ten minutes. The waiting is where the flavour comes from — give them at least six hours, and they are better the next day.

Ingredients

  • 6 eggs
  • 120ml soy sauce
  • 120ml water
  • 2 tbsp caster sugar
  • 1 tbsp sesame oil
  • 3 garlic cloves, finely chopped
  • 1 tsp gochugaru
  • 2 spring onions, finely sliced
  • 1 tbsp toasted sesame seeds
  • 1 long red chilli, sliced

Instructions

  1. Bring a pan of water to a rolling boil. Lower the eggs in gently and cook for exactly 6 minutes 30 seconds.
  2. Move them straight into a bowl of iced water and leave for 5 minutes, then peel carefully.
  3. Stir the soy sauce, water and sugar together in a container until the sugar dissolves.
  4. Add the sesame oil, garlic, gochugaru, spring onion, sesame seeds and chilli.
  5. Lower the peeled eggs in, then lay a piece of kitchen paper over the surface so the exposed tops stay wet.
  6. Refrigerate for at least 6 hours, ideally overnight. Serve halved over hot rice with a spoonful of the marinade.

Notes:

  • 6 minutes 30 is the whole recipe. Set a timer and use the ice bath
  • The kitchen paper trick stops the tops of the eggs staying pale
  • They keep for 3 days, and the marinade doubles as a sauce for rice or noodles
