Kimbap are Korea's answer to the packed lunch — neat rolls of sesame-seasoned rice and colourful fillings wrapped in toasted seaweed. Unlike Japanese sushi, the rice is seasoned with sesame oil and salt rather than vinegar, so the flavour is nutty, savoury and incredibly moreish.
They're the ultimate picnic and lunchbox food: everything is fully cooked, they travel well, and kids love them. Once you've rolled one or two you'll quickly get the hang of it.
The classic fillings are egg, carrot, spinach, pickled radish and ham, but kimbap are wonderfully forgiving — use whatever you have. Danmuji (yellow pickled radish) is worth hunting down at an Asian grocer for that authentic crunch.
