Japchae (Korean Glass Noodles)

Japchae is Korea's festive noodle dish — springy sweet potato glass noodles tossed with marinated beef, colourful vegetables and a glossy soy-sesame dressing. It's served at birthdays, holidays and celebrations, but it's easy enough for a Tuesday night.

The magic is in the noodles themselves: they stay wonderfully chewy and slippery, soaking up the sweet-savoury sauce without ever going soggy. Every mouthful has a bit of everything — beef, earthy mushrooms, sweet capsicum and spinach.

Cooking each vegetable briefly on its own keeps the colours bright and the textures distinct — it sounds fussy, but it's just a few quick turns in the same pan. Japchae is delicious warm or at room temperature, so it's brilliant for making ahead.

Ingredients

  • 250g Korean sweet potato glass noodles (dangmyeon)
  • 200g beef scotch fillet or rump, thinly sliced
  • 80ml soy sauce (1/3 cup)
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 3 garlic cloves, finely chopped
  • 1 brown onion, thinly sliced
  • 1 carrot, cut into thin matchsticks
  • 1 red capsicum, thinly sliced
  • 6 fresh shiitake mushrooms, sliced (or dried, soaked and sliced)
  • 120g baby spinach
  • 2 tbsp vegetable oil
  • 1 tbsp toasted sesame seeds
  • 1/4 tsp freshly ground black pepper

Instructions

  1. In a small bowl, mix 2 tablespoons of the soy sauce with 1 tablespoon of the brown sugar and a third of the garlic. Toss with the sliced beef and set aside to marinate.
  2. Cook the glass noodles in a large pot of boiling water for 6-7 minutes until chewy but tender. Drain, rinse under cold water, then snip a few times with kitchen scissors and toss with 1 tablespoon of the sesame oil.
  3. Stir the remaining soy sauce, sugar and sesame oil together to make the dressing.
  4. Heat a little vegetable oil in a large frying pan or wok over medium-high heat. Cook the onion for 2 minutes, then remove. Cook the carrot and capsicum for 2 minutes, then remove. Cook the mushrooms for 2-3 minutes, then remove.
  5. Add the spinach with the remaining garlic and toss for 30 seconds until just wilted, then remove.
  6. Add the marinated beef to the hot pan and stir-fry for 2-3 minutes until browned and cooked through.
  7. In a large bowl, combine the noodles, beef and all the vegetables. Pour over the dressing and toss well with tongs (or clean hands) until everything is glossy and evenly coated.
  8. Season with the pepper, scatter with sesame seeds and serve warm or at room temperature.
