Hotteok (Korean Sweet Pancakes)

Hotteok are the smell of a Korean winter street market, golden yeasted pancakes fried on a hot griddle until crisp outside, with a molten filling of brown sugar, cinnamon and crushed nuts that oozes out with the first bite.

The dough is soft and slightly chewy thanks to a little glutinous rice flour, and pressing each ball flat in the pan gives you those gorgeous crisp golden edges. They're best eaten warm, when the sugary centre is still runny like caramel.

They're surprisingly simple to make at home with pantry staples. The dough needs an hour to rise, but the actual shaping and frying is quick, fun, and very hard to stop at one.

Pantry bits

  • Large mixing bowl
  • Large non-stick frying pan or griddle
  • Sturdy spatula or egg flip for pressing
  • Small bowl for the filling

Ingredients

  • 2 cups (300g) plain flour
  • 1/4 cup (40g) glutinous rice flour (or extra plain flour)
  • 2 tsp instant dried yeast
  • 1 tbsp caster sugar
  • 1/2 tsp fine salt
  • 1 cup (250ml) lukewarm milk
  • 1 tbsp vegetable oil, plus extra for frying
  • 1/2 cup (110g) brown sugar
  • 1 tsp ground cinnamon
  • 1/4 cup (30g) walnuts or peanuts, finely chopped
  • 1 tbsp sunflower seeds (optional)

Instructions

  1. Whisk the plain flour, glutinous rice flour, yeast, caster sugar and salt in a large bowl. Add the lukewarm milk and 1 tablespoon of oil and mix into a soft, sticky dough.
  2. Cover the bowl and leave in a warm spot for about 1 hour, until doubled in size.
  3. Meanwhile, make the filling by mixing the brown sugar, cinnamon, chopped nuts and sunflower seeds in a small bowl.
  4. Punch down the risen dough and divide it into 8 pieces with oiled hands; the dough will be sticky, so keep your hands well oiled.
  5. Flatten a piece of dough into a disc in your palm, spoon in a generous tablespoon of filling, then pinch the edges together firmly to seal it into a ball. Repeat with the rest.
  6. Heat a good glug of oil in a large frying pan over medium heat. Place 2-3 dough balls in seam-side down and cook for 1 minute.
  7. Flip the balls, then press each one flat with a spatula (or an oiled egg flip) into a 10cm pancake. Cook for 2-3 minutes until deep golden.
  8. Flip once more and cook for another 1-2 minutes until golden on both sides and the sugar inside has melted. Cook the remaining pancakes the same way.
  9. Rest for a couple of minutes before eating; the filling is molten hot. Best enjoyed warm.
