Hainanese Chicken Rice

Hainanese chicken rice looks humble — poached chicken, rice, a few sauces — but done well it's one of the most satisfying meals in the Chinese repertoire. The chicken is silky and tender, and the rice, cooked in the poaching broth with ginger and garlic, is honestly the star of the show.

The gentle off-heat poach is the secret to that famously tender texture, and it's practically foolproof once you trust the method: bring the pot to the boil, turn it off, and let the residual heat do the work.

With a bright ginger-spring onion sauce and a bowl of the light broth on the side, it's a complete meal from one pot and one rice cooker.

Pantry bits

  • Large stockpot with lid
  • Rice cooker or medium saucepan with lid
  • Meat thermometer
  • Large bowl (for iced water)
  • Cleaver or sharp knife and chopping board
  • Fine sieve
  • Small heatproof bowl

Ingredients

  • 1 whole chicken (about 1.6kg)
  • 6 slices ginger, plus 2 tbsp finely grated ginger for the sauce
  • 4 spring onions, plus 4 extra finely chopped for the sauce
  • 1 tbsp salt, plus 1/2 tsp for the sauce
  • 2 tsp sesame oil
  • 2 cups (400g) jasmine rice
  • 2 tbsp chicken fat trimmings or vegetable oil
  • 4 cloves garlic, finely chopped
  • 2 1/2 cups (625ml) reserved poaching broth, plus extra to serve
  • 1/4 cup (60ml) vegetable oil (for the ginger-spring onion sauce)
  • 1 Lebanese cucumber, thinly sliced
  • Kecap manis or dark soy sauce, to serve
  • Chilli sauce, to serve
  • Fresh coriander sprigs, to serve

Instructions

  1. Rub the chicken all over with the tablespoon of salt, then rinse. Stuff the cavity with the ginger slices and 4 whole spring onions.
  2. Place the chicken breast-side up in a large stockpot and cover with cold water. Bring to the boil, skim, then cover, turn off the heat and leave for 50 minutes without lifting the lid. Check the thickest part of the thigh reaches 74C.
  3. Lift the chicken into a big bowl of iced water for 10 minutes to stop the cooking and firm the skin, then drain, rub with the sesame oil and set aside. Reserve the poaching broth.
  4. Rinse the jasmine rice until the water runs clear. Heat the chicken fat or oil in a saucepan or rice cooker, fry the garlic until fragrant, then stir in the rice. Add 2 1/2 cups of the reserved broth and cook by absorption or in the rice cooker.
  5. For the sauce, combine the grated ginger, chopped spring onions and 1/2 teaspoon of salt in a heatproof bowl. Heat the 1/4 cup of vegetable oil until shimmering and carefully pour it over — it will sizzle. Stir and set aside.
  6. Chop the chicken through the bone into pieces, or slice the meat off the bone if you prefer.
  7. Serve the chicken over the fragrant rice with cucumber slices, the ginger-spring onion sauce, kecap manis and chilli sauce, plus small bowls of the hot broth scattered with coriander.
