Haemul Pajeon (Korean Seafood Pancake)

Haemul pajeon is Korea's beloved seafood and spring onion pancake — crisp and golden at the edges, soft and savoury in the middle, and studded with prawns, squid and long batons of spring onion. In Korea it's the classic thing to eat on a rainy day with a glass of makgeolli.

The trick to a really crispy pancake is a cold, lumpy batter (icy soda water works a treat) and a generous slick of hot oil in the pan. Don't overmix and don't rush the flip.

A bag of frozen marinara mix from the supermarket makes this incredibly easy at home — no fiddly seafood prep required. Serve it cut into wedges with the tangy soy dipping sauce.

Ingredients

  • 150g plain flour (1 cup)
  • 35g rice flour (1/4 cup)
  • 1/2 tsp salt
  • 310ml icy cold soda water
  • 1 egg, lightly beaten
  • 8 spring onions, trimmed and halved lengthways
  • 250g mixed seafood (prawns, squid and mussels), roughly chopped
  • 3 tbsp vegetable oil, for frying
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp toasted sesame seeds
  • 1 long red chilli, finely sliced (optional)

Instructions

  1. Make the dipping sauce by stirring together the soy sauce, rice vinegar, sesame oil, sesame seeds and chilli in a small bowl. Set aside.
  2. In a large bowl, whisk the plain flour, rice flour and salt. Pour in the soda water and egg and stir briefly — a few lumps are fine, and overmixing makes the pancake tough.
  3. Pat the seafood dry with paper towel, then fold it through the batter.
  4. Heat half the vegetable oil in a large non-stick frying pan over medium-high heat until shimmering. Lay half the spring onions in the pan in a single layer, then pour over half the batter, spreading it out to cover them.
  5. Cook for 4-5 minutes until the base is deeply golden and crisp, then carefully flip with a large spatula and cook the other side for 3-4 minutes.
  6. Slide onto a board and repeat with the remaining oil, spring onions and batter to make a second pancake.
  7. Cut into wedges and serve hot with the dipping sauce.
