Gyeran Mari (Korean Rolled Omelette)

Gyeran mari turns up in lunchboxes, on banchan plates and as a quick dinner for one. It is a rolled omelette, but unlike its Japanese cousin it is folded around a confetti of finely diced vegetables rather than being sweetened.

The technique is forgiving. You pour thin layers of egg, roll each one over as it sets, and keep going until you have a fat log. Cut across into rounds and every slice shows a spiral of egg with flecks of colour through it.

Ingredients

  • 6 eggs
  • 1/2 carrot, very finely diced
  • 1/2 red capsicum, very finely diced
  • 3 spring onions, finely sliced
  • 1 handful baby spinach, finely chopped
  • 2 tsp neutral oil
  • 1/2 tsp fine salt
  • Ground black pepper
  • 1 sheet toasted nori, optional

Instructions

  1. Beat the eggs with the salt and pepper until fully combined but not frothy. Strain them through a sieve if you want a smoother finish, then stir in all the vegetables.
  2. Heat a non-stick frying pan over low to medium heat and brush lightly with oil. Low heat is essential; a hot pan browns the egg and it will not roll neatly.
  3. Pour in a third of the mixture and tilt to cover the base. When the surface is just set but still slightly wet, fold or roll it from one side to the other with a spatula.
  4. Push the roll to the far edge, oil the empty pan, pour in half the remaining egg and let it run under the roll. When it sets, roll it up around the first log. Repeat with the last of the egg, laying the nori sheet on before the final roll if using.
  5. Turn the log onto a board, press it into a neat shape and rest for 2 minutes, then slice into 2cm rounds.
