Gochujang Salmon Rice Bowl

Gochujang and salmon are a natural pair. The paste is sweet, savoury and mildly hot, and its sugars caramelise against the fat of the fish into a glaze that looks like it took far longer than twelve minutes.

Everything here happens in one pan while the rice keeps warm. The cucumber and quick-pickled carrot are not optional in our view; the glaze is rich, and it needs something sharp and cold sitting next to it.

Ingredients

  • 4 salmon fillets, skin on (about 150g each)
  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 2 garlic cloves, finely grated
  • 1 tsp sesame oil
  • 1 tbsp neutral oil
  • 1 carrot, julienned
  • 2 tbsp rice vinegar, extra, for the carrot
  • 1 tsp caster sugar
  • 2 Lebanese cucumbers, sliced
  • 4 cups steamed rice, 3 spring onions and sesame seeds, to serve

Instructions

  1. Toss the julienned carrot with the extra vinegar, sugar and a pinch of salt and set aside to pickle while you cook.
  2. Whisk the gochujang, soy, honey, vinegar, garlic and sesame oil together in a small bowl.
  3. Pat the salmon dry. Heat the neutral oil in a frying pan over medium high heat and cook the fillets skin side down for 5 minutes without moving them, until the skin is crisp.
  4. Turn the fillets, brush the tops generously with the glaze and cook for 3 to 4 minutes more, spooning the pan sauce over, until just cooked through and lacquered.
  5. Serve over rice with the pickled carrot, cucumber, spring onion and sesame seeds, and any glaze left in the pan poured over the top.
