Ginger and Spring Onion Chicken (Jiang Cong Ji)

Ginger and spring onion is the workhorse Cantonese flavour base, and used generously it becomes the dish rather than the seasoning. Expect to julienne a whole thumb of ginger and use two bunches of spring onions. That is not a mistake.

Everything cooks in about eight minutes over high heat, so cut the chicken thin and have the sauce mixed before you start. A handful of snow peas and some choy sum keep it from being all protein and aromatics.

Ingredients

  • 600g chicken thigh fillets, thinly sliced
  • 1 tbsp Shaoxing wine
  • 2 tsp cornflour, plus 1 tsp extra
  • 2 tbsp neutral oil
  • 60g ginger, peeled and finely julienned
  • 2 bunches spring onions, cut into 5cm lengths
  • 4 garlic cloves, sliced
  • 120g snow peas, trimmed
  • 1 bunch choy sum, cut into 6cm lengths
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 125ml chicken stock
  • 1 tsp sesame oil and white pepper

Instructions

  1. Toss the chicken with the Shaoxing, 2 tsp cornflour and a pinch of salt. Mix the extra teaspoon of cornflour with 1 tbsp cold water for the slurry.
  2. Heat the oil in a wok over high heat and stir fry the chicken for 3 minutes until browned and almost cooked, then push it to one side of the wok.
  3. Add the ginger, garlic and spring onion whites to the space and stir fry for 1 minute until the ginger smells sweet and toasty.
  4. Add the snow peas and choy sum stems, toss for 1 minute, then add the leaves, oyster sauce, soy and stock and bring to a simmer.
  5. Stir in the slurry and cook for 30 seconds until the sauce clings. Fold through the spring onion greens, finish with sesame oil and white pepper, and serve with rice.
