Garlic Soy Egg Noodles

Some nights you do not want a recipe, you want dinner. This is that dinner. A packet of egg noodles, a head of garlic you were going to use eventually, and a splash of soy is genuinely all it takes.

The one step worth doing properly is the sizzling oil. Heat it until it just begins to shimmer, then pour it over the garlic and spring onion in the bowl. It blooms instantly, the kitchen smells extraordinary, and that is your sauce made.

Add chilli oil to taste, a fried egg on top if you are hungry, or a handful of leftover roast chicken. Ten minutes from cupboard to bowl, and better than most things you could have ordered.

Ingredients

  • 200 g fresh egg noodles (or 150 g dried egg noodles)
  • 2 tbsp light soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp caster sugar
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 4 garlic cloves, thinly sliced
  • 3 spring onions, thinly sliced, white and green parts separated
  • 1 to 2 tbsp chilli oil, to taste
  • 1 tbsp toasted sesame seeds

Instructions

  1. Bring a large saucepan of water to the boil. In a large serving bowl, combine the light soy sauce, dark soy sauce, caster sugar and sesame oil, stirring until the sugar dissolves.
  2. Add the sliced garlic and the white parts of the spring onion to the bowl, piling them in the centre on top of the sauce.
  3. Cook the noodles for 2 minutes for fresh or 4 minutes for dried, until just tender with a little spring left in them. Reserve 2 tbsp of the cooking water, then drain.
  4. Heat the vegetable oil in a small saucepan over medium-high heat until it shimmers and a piece of spring onion sizzles on contact, about 1 minute.
  5. Carefully pour the hot oil over the garlic and spring onion in the bowl. It will sizzle and turn fragrant straight away. Stir through the reserved noodle water to loosen the sauce.
  6. Add the drained noodles and toss well with tongs until every strand is coated and glossy.
  7. Top with the green spring onion, chilli oil to taste and the toasted sesame seeds. Toss once more and eat immediately, while it is still hot.
