Gai Yang (Thai BBQ Chicken)

Gai yang is Thai street food at its best — chicken marinated in lemongrass, garlic and fish sauce, then grilled until the skin is burnished and smoky. In Thailand you'll find it sold from roadside grills, chopped up and served with sticky rice and a punchy dipping sauce.

The marinade does all the heavy lifting here. Coriander root, white pepper and palm sugar give the chicken that sweet-savoury depth you can't quite put your finger on, while the barbecue adds the char.

It's a brilliant one for the weekend barbie — marinate the night before, throw it on the grill and you've got a crowd-pleaser that beats a plain barbecued chook every time.

Ingredients

  • 1.2kg chicken thigh fillets, skin on if possible
  • 2 lemongrass stalks, white part only, finely chopped
  • 6 garlic cloves
  • 4 coriander roots and stems, scraped and chopped
  • 1 tsp white peppercorns
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 tbsp palm sugar, grated (or brown sugar)
  • 1 tsp ground turmeric
  • 2 tbsp coconut milk
  • 1 tbsp vegetable oil
  • 1 lime, cut into wedges, to serve
  • Steamed jasmine or sticky rice, to serve

Instructions

  1. Pound the lemongrass, garlic, coriander roots and white peppercorns in a mortar and pestle until you have a rough paste (or blitz in a small food processor).
  2. Mix the paste with the fish sauce, soy sauce, palm sugar, turmeric, coconut milk and oil to make the marinade.
  3. Coat the chicken thoroughly in the marinade, cover and refrigerate for at least 2 hours, ideally overnight.
  4. Bring the chicken to room temperature and preheat your barbecue or chargrill pan to medium.
  5. Grill the chicken for 6-8 minutes per side, turning occasionally, until charred in spots and cooked through. Baste with any leftover marinade during the first half of cooking only.
  6. Rest the chicken for 5 minutes, then slice into thick strips.
  7. Serve with lime wedges and steamed rice, plus a Thai dipping sauce like nam jim jaew if you have it.
