Furikake Salmon Rice Bowl

This is the weeknight version of a salmon rice bowl: no marinating, no resting, just soy and mirin brushed over a fillet and a hot oven doing the rest while the rice finishes.

Flaking the salmon into the bowl rather than sitting it on top in one piece means every spoonful gets some. Furikake does the seasoning work that would otherwise take five ingredients.

Ingredients

  • 2 salmon fillets, about 180g each, skin removed
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1 tsp sesame oil
  • 2 cups cooked short-grain rice, hot
  • 2 tbsp furikake
  • 2 spring onions, sliced
  • 1 tbsp Kewpie mayonnaise
  • ½ Lebanese cucumber, thinly sliced

Instructions

  1. Heat the oven to 220°C and line a small tray.
  2. Mix the soy sauce, mirin and sesame oil, then brush generously over the salmon fillets.
  3. Roast for 10–12 minutes, brushing once more halfway through, until the salmon is just set and starting to caramelise at the edges.
  4. Divide the hot rice between two bowls and scatter over half the furikake.
  5. Flake the salmon into large pieces straight over the rice, spooning any tray juices on top.
  6. Add the cucumber, drizzle over the Kewpie, and finish with the spring onion and remaining furikake.

Notes:

  • Pull the salmon while the centre is still slightly translucent — it carries on cooking in the hot rice
  • Do not waste the tray juices; that is where the soy and mirin have concentrated
  • Works just as well with a tin of salmon if you are truly out of time
