Ebi Chiri (Japanese Chilli Prawns)

Ebi chiri came to Japan from Sichuan cooking and got softened along the way. The chilli bean paste is still there, but it sits behind tomato, a little sugar and a lot of ginger and spring onion, so the sauce reads bright rather than fiery.

It is a fast dish by design. The sauce comes together in the time it takes the prawns to turn pink, which is about three minutes. Have everything chopped before the wok goes on and dinner is done in under twenty.

Ingredients

  • 600g green prawns, peeled and deveined, tails on
  • 1 tbsp cornflour
  • 2 tbsp neutral oil
  • 4cm piece ginger, finely chopped
  • 4 garlic cloves, finely chopped
  • 6 spring onions, white and green parts separated and sliced
  • 1 tbsp doubanjiang (chilli bean paste)
  • 3 tbsp tomato sauce (ketchup)
  • 1 tbsp sake or dry sherry
  • 2 tsp caster sugar
  • 1 tsp rice vinegar
  • 125ml chicken or dashi stock
  • 1 head broccolini, blanched, to serve

Instructions

  1. Pat the prawns dry and toss them with the cornflour and a pinch of salt.
  2. Stir the doubanjiang, tomato sauce, sake, sugar, vinegar and stock together in a small bowl so the sauce is ready to go in one pour.
  3. Heat the oil in a wok over high heat. Add the prawns in a single layer and cook for 1 minute each side until just pink, then lift them out onto a plate. They will finish cooking in the sauce.
  4. Drop the heat to medium. Add the ginger, garlic and spring onion whites and stir for 30 seconds until fragrant, then pour in the sauce and let it bubble for a minute until it thickens slightly.
  5. Return the prawns and any resting juices to the wok, toss for 1 minute to coat, then scatter over the spring onion greens. Serve with rice and blanched broccolini.
