Drunken Noodles (Pad Kee Mao)

Pad kee mao — drunken noodles — are the fiery, basil-loaded cousin of pad see ew. Wide rice noodles get tossed through a screaming-hot wok with chilli, garlic, and a glossy sauce, finished with a big handful of Thai basil. Despite the name, there's no alcohol in it — legend says it's what you cook (or crave) after a big night.

The appeal is the balance of soft, chewy noodles, savoury-sweet sauce and proper chilli heat, with that unmistakable aniseed hit from the basil tying it together.

It's a genuine 15-minute dinner once your prep is done. The only rule: get the wok properly hot and don't crowd it — that's where the smoky char comes from.

Ingredients

  • 400g fresh wide rice noodles (or 250g dried, soaked per packet)
  • 400g chicken thigh fillets, thinly sliced
  • 3 tbsp vegetable oil
  • 4 garlic cloves, roughly chopped
  • 3 birdseye chillies, finely chopped (or to taste)
  • 1 small brown onion, sliced into wedges
  • 1 red capsicum, sliced
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp dark soy sauce
  • 2 tsp caster sugar
  • 100g baby corn, halved lengthways (optional)
  • 1 large handful Thai basil leaves

Instructions

  1. Mix the oyster sauce, fish sauce, dark soy and sugar in a small bowl and set aside. If using fresh noodles, microwave for 1 minute to soften and gently separate them.
  2. Pound or chop the garlic and chillies together into a rough paste.
  3. Heat a wok over high heat until smoking, add 2 tablespoons of oil and stir-fry the chicken for 2-3 minutes until just cooked. Remove to a plate.
  4. Add the remaining oil, then the garlic-chilli paste, and stir-fry for 20 seconds until fragrant — don't let it burn.
  5. Add the onion, capsicum and baby corn and stir-fry for 1-2 minutes until just starting to soften.
  6. Return the chicken to the wok with the noodles and sauce. Toss for 1-2 minutes, letting the noodles catch a little char on the wok.
  7. Turn off the heat, fold through the Thai basil until just wilted, and serve immediately.
