Dak Kkochi (Korean Chicken and Spring Onion Skewers)

Dak kkochi are the skewers sold from carts outside Korean subway stations, turned over charcoal and painted with a red glaze that goes sticky at the edges. Thigh meat, chunks of spring onion, and not much else.

A ridged grill pan gets you close enough at home, and the whole thing cooks in ten minutes because the chicken is cut small. Serve with lettuce leaves and cucumber so people can wrap them, which is how they are usually eaten anyway.

Ingredients

  • 700g chicken thigh fillets, cut into 3cm pieces
  • 8 spring onions, cut into 4cm lengths
  • 1 tbsp neutral oil
  • 2 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp mirin
  • 3 garlic cloves, finely grated
  • 1 tsp sesame oil
  • 1 baby cos lettuce, leaves separated
  • 2 Lebanese cucumbers, cut into batons
  • Toasted sesame seeds, to serve

Instructions

  1. If using bamboo skewers, soak eight of them in water while you prepare everything else.
  2. Whisk the gochujang, soy, honey, mirin, garlic and sesame oil together. Set half aside for glazing at the table.
  3. Thread the chicken onto the skewers, alternating with pieces of spring onion, and brush all over with the neutral oil. Season lightly with salt.
  4. Heat a grill pan or barbecue over medium high heat and cook the skewers for 4 minutes each side until charred and cooked through.
  5. Brush generously with the glaze and give them another minute a side so it caramelises without burning. Scatter with sesame seeds and serve with the lettuce, cucumber and reserved sauce for dipping.
