Dak Bulgogi (Korean BBQ Chicken)

Beef bulgogi gets all the attention, but dak bulgogi - the chicken version - is what Korean families cook on a Tuesday. Thigh fillets soak up the sweet soy marinade far better than breast, and the higher fat content means they caramelise instead of drying out.

The marinade is the standard bulgogi formula with one addition worth making room for: a spoonful of maesil cheong, the green plum syrup Korean cooks keep beside the stove. It sweetens without heaviness and adds a faint fruity tartness that balances all that soy and garlic.

Cook it in a hot pan in batches, or over charcoal if you have it going. Serve with rice, lettuce leaves for wrapping, and whatever banchan is in the fridge.

Ingredients

  • 800g chicken thigh fillets, sliced 1cm thick
  • 5 tbsp bulgogi sauce
  • 1 tbsp maesil cheong (green plum syrup)
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 3 garlic cloves, finely minced
  • 1/2 brown onion, thinly sliced
  • 1 carrot, cut into thin batons
  • 2 spring onions, cut into 4cm lengths
  • 1 tbsp neutral oil
  • 1 tsp toasted sesame seeds
  • Butter lettuce leaves and steamed rice, to serve

Instructions

  1. Combine the chicken, bulgogi sauce, maesil cheong, soy sauce, sesame oil and garlic in a bowl. Mix well, cover and refrigerate for at least 30 minutes, or up to overnight.
  2. Add the onion and carrot to the marinated chicken and toss through.
  3. Heat the neutral oil in a large frying pan or wok over high heat until just smoking.
  4. Add half the chicken mixture in a single layer and cook, undisturbed, for 2 minutes so it catches and caramelises.
  5. Stir-fry for a further 2-3 minutes until cooked through and glazed. Transfer to a plate and repeat with the remaining chicken.
  6. Return all the chicken to the pan, add the spring onion and toss for 30 seconds.
  7. Scatter with sesame seeds and serve hot with rice and lettuce leaves for wrapping.
