Char Siu Bao (Steamed BBQ Pork Buns)

Char siu bao are the soft white buns at the front of every yum cha trolley. The dough is enriched and lightly sweetened so it steams up cloud-white, and the filling is diced barbecue pork bound in a thick oyster sauce gravy.

Two rules decide whether they work. The filling must be cold before it touches the dough, and the lid stays on for the full steam. Lift it early and the buns sink and wrinkle.

Ingredients

  • 300g bao flour or plain flour
  • 1 1/2 tsp instant dried yeast
  • 3 tbsp caster sugar
  • 1 tsp baking powder
  • 160ml warm milk
  • 2 tbsp neutral oil
  • 350g char siu, finely diced
  • 1 tbsp neutral oil, extra
  • 1/2 brown onion, finely diced
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tbsp caster sugar, extra
  • 1 tbsp cornflour mixed with 125ml water

Instructions

  1. Mix the flour, yeast, sugar and baking powder, then add the warm milk and oil and knead for 10 minutes until smooth and elastic. Cover and prove for 1 hour until doubled.
  2. Meanwhile, fry the onion in the extra oil for 3 minutes, add the oyster sauce, soy and extra sugar, then stir in the cornflour slurry and cook until thick and glossy.
  3. Fold through the diced char siu and spread the filling on a plate to cool completely. Warm filling will tear the dough.
  4. Knock back the dough, divide into 12, and roll each piece into a disc thicker in the middle than at the edge.
  5. Spoon filling into the centre, gather the edges up and pleat them closed, then sit each bun on a square of baking paper and prove for 20 minutes.
  6. Steam over rapidly boiling water for 12 to 15 minutes. Do not lift the lid before 12 minutes or they will collapse.
