Chamchi Deopbap (Korean Tuna Rice Bowl)

Chamchi deopbap is the dish Korean students live on. A tin of tuna, a spoon of gochujang, whatever vegetables are in the fridge and a fried egg on top, all built over hot rice in about the time it takes the kettle to boil.

Do not skip warming the tuna through with the onion and sauce. Two minutes in the pan turns it from something out of a tin into something that tastes cooked, and the raw cucumber and carrot on the side keep it fresh rather than heavy.

Ingredients

  • 2 tins tuna in springwater (about 380g total), drained well
  • 1 tbsp neutral oil
  • 1/2 brown onion, finely diced
  • 2 garlic cloves, finely chopped
  • 1 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tsp caster sugar
  • 1 tsp sesame oil
  • 2 eggs
  • 1 Lebanese cucumber, cut into batons
  • 1/2 carrot, julienned
  • 2 cups hot steamed rice
  • 2 spring onions and toasted sesame seeds, to serve

Instructions

  1. Heat the oil in a frying pan over medium heat and cook the onion and garlic for 2 minutes until softened.
  2. Add the drained tuna, gochujang, soy and sugar and stir for 2 minutes, breaking up the tuna, until everything is coated and warmed through. Finish with the sesame oil and take off the heat.
  3. Wipe the pan, add a little more oil and fry the eggs until the whites are set and the yolks still run.
  4. Divide the hot rice between two bowls and spoon the tuna over one half of each bowl.
  5. Arrange the cucumber and carrot alongside, slide a fried egg on top and finish with spring onion and sesame seeds. Break the yolk and mix everything together before eating.
