Bibimbap (Korean Mixed Rice Bowl)

Bibimbap literally means "mixed rice", and that's the joy of it — a bowl of warm rice topped with seasoned vegetables, savoury beef mince and a fried egg, all crowned with a spoonful of sweet-spicy gochujang sauce. You mix the lot together at the table until every grain is coated.

Each topping is simple on its own; together they make something far greater — nutty, spicy, fresh and rich all at once, with the runny egg yolk tying it all together.

It's also a brilliant fridge-clearer. The vegetables here are a classic line-up, but bibimbap happily takes whatever needs using up. Prep the toppings ahead and dinner is on the table in minutes.

Ingredients

  • 300g short or medium-grain rice, rinsed
  • 300g beef mince
  • 2 tbsp soy sauce
  • 3 tsp caster sugar
  • 3 garlic cloves, finely chopped
  • 2 tbsp sesame oil
  • 1 carrot, cut into thin matchsticks
  • 1 zucchini, cut into thin matchsticks
  • 200g bean sprouts
  • 150g baby spinach
  • 6 fresh shiitake or button mushrooms, sliced
  • 4 eggs
  • 3 tbsp gochujang (Korean chilli paste)
  • 2 tsp each rice vinegar and honey
  • 2 tbsp vegetable oil
  • 1 tbsp toasted sesame seeds

Instructions

  1. Cook the rice in a rice cooker or saucepan according to packet directions and keep warm.
  2. Make the bibimbap sauce by stirring together the gochujang, rice vinegar, honey, 1 tablespoon of the sesame oil and 1 tablespoon of water. Set aside.
  3. Blanch the bean sprouts in boiling water for 1 minute and the spinach for 30 seconds. Drain, squeeze dry, then season each with a pinch of salt, a little of the garlic and a drizzle of sesame oil.
  4. Heat a little vegetable oil in a large frying pan over medium-high heat. Stir-fry the carrot for 1-2 minutes with a pinch of salt, then remove. Repeat with the zucchini, then the mushrooms, cooking each until just tender and setting aside separately.
  5. Add the beef mince to the pan with the remaining garlic, soy sauce and sugar and stir-fry for 4-5 minutes until browned and glossy.
  6. Wipe out the pan, add a splash more oil and fry the eggs sunny-side up so the yolks stay runny.
  7. Divide the warm rice between 4 bowls. Arrange the beef and each vegetable in neat piles on top, then crown each bowl with a fried egg.
  8. Sprinkle with sesame seeds, add a generous spoonful of the sauce and serve — mixing everything together thoroughly before eating.
