Bibim Guksu (Korean Spicy Cold Noodles)

Bibim guksu is the fastest cold noodle dish in the Korean repertoire. Thin wheat somyeon noodles cook in under three minutes, get shocked in iced water until they are properly cold, then are tossed through a sweet, sour and spicy cho gochujang dressing.

Everything hinges on the dressing being sharper than you expect. Gochujang alone is too heavy and sweet, so it is cut with rice vinegar and a spoonful of maesil cheong until it tastes bright enough to make you blink. Cold noodles dull flavour, so season it boldly in the bowl.

Chopped sour kimchi, cucumber and a soft-boiled egg are the standard toppings. It comes together in fifteen minutes and is exactly the right thing on a hot Sydney evening.

Ingredients

  • 200g somyeon (thin wheat noodles)
  • 3 tbsp cho gochujang
  • 1 tbsp maesil cheong (green plum syrup)
  • 1 tbsp rice vinegar
  • 1 tsp soy sauce
  • 2 tsp sesame oil
  • 1 garlic clove, finely grated
  • 100g well-fermented kimchi, roughly chopped
  • 1 Lebanese cucumber, cut into fine matchsticks
  • 2 eggs, soft boiled and halved
  • 1 tsp toasted sesame seeds
  • Ice cubes, for chilling

Instructions

  1. Whisk the cho gochujang, maesil cheong, rice vinegar, soy sauce, sesame oil and garlic together in a large bowl. Taste - it should be sharp and slightly too strong on its own.
  2. Bring a large pot of water to a rolling boil. Add the somyeon and cook for 2-3 minutes, adding a splash of cold water each time it threatens to boil over.
  3. Drain the noodles and rinse under cold running water, rubbing them with your hands to wash off the starch, until completely cold. Finish in a bowl of iced water for 30 seconds, then drain very well.
  4. Add the drained noodles to the bowl of dressing along with the kimchi and half the cucumber. Toss thoroughly with your hands or tongs so every strand is coated red.
  5. Divide between two bowls and top with the remaining cucumber and the halved eggs.
  6. Scatter with sesame seeds and serve immediately, while the noodles are still icy.
