Beef in Black Bean Sauce

Beef in black bean sauce is the quiet achiever of the Chinese takeaway menu. It's deeply savoury, a little garlicky, and the fermented black beans give it that unmistakable umami hit you can't get from anything else.

The key to tender beef is velveting — a quick marinade with bicarb soda and cornflour that keeps even budget cuts silky. Fermented black beans are cheap and keep for ages in the pantry, though black bean sauce from a jar works in a pinch.

Once your ingredients are prepped, the whole thing cooks in under ten minutes, making it a genuinely realistic weeknight dinner.

Pantry bits

  • Wok or large frypan
  • Wok spatula or wooden spoon
  • Sharp knife and chopping board
  • Mixing bowls

Ingredients

  • 500g beef rump or flank steak, thinly sliced against the grain
  • 1/2 tsp bicarbonate of soda
  • 1 tbsp soy sauce
  • 1 tbsp cornflour, plus 1 tsp extra for the sauce
  • 2 tbsp fermented black beans, rinsed and roughly chopped (or 2 tbsp black bean sauce)
  • 3 cloves garlic, finely chopped
  • 1 tbsp finely grated ginger
  • 1 brown onion, cut into wedges
  • 1 green capsicum, cut into chunks
  • 1 red capsicum, cut into chunks
  • 2 tbsp Shaoxing wine (or dry sherry)
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/2 cup (125ml) chicken or beef stock
  • 2 tbsp vegetable oil

Instructions

  1. Toss the sliced beef with the bicarbonate of soda, soy sauce and 1 tablespoon of cornflour. Set aside to velvet for 15 minutes.
  2. Mix the extra teaspoon of cornflour with the stock, oyster sauce and sugar in a small jug and set aside.
  3. Heat 1 tablespoon of the oil in a wok over high heat until smoking. Stir-fry the beef in two batches for 1-2 minutes until just browned, then remove to a plate.
  4. Add the remaining oil to the wok and stir-fry the onion and capsicum for 2 minutes until slightly charred but still crisp.
  5. Add the black beans, garlic and ginger and stir-fry for 30 seconds until fragrant.
  6. Splash in the Shaoxing wine, then pour in the stock mixture and bring to a rapid simmer.
  7. Return the beef and any juices to the wok and toss for 1 minute until the sauce is glossy and coats everything.
  8. Serve immediately with steamed jasmine rice.
