Beef Bulgogi (Korean BBQ Beef)

Bulgogi — literally "fire meat" — is Korea's most famous beef dish, and for good reason. Paper-thin slices of beef are steeped in a sweet garlicky soy marinade with grated nashi pear, then seared hard and fast until the edges caramelise.

The result is tender, juicy and packed with that irresistible sweet-savoury flavour that makes Korean barbecue so addictive. The pear does double duty, tenderising the meat while adding a subtle fruitiness you can't quite place but would miss if it were gone.

The only trick at home is slicing the beef thinly — 20 minutes in the freezer firms it up beautifully — and cooking it in batches so it sears rather than stews. From there it's minutes to the table.

Ingredients

  • 600g beef scotch fillet, very thinly sliced
  • 80ml soy sauce (1/3 cup)
  • 2 tbsp brown sugar
  • 1/2 nashi pear, peeled and finely grated
  • 4 garlic cloves, finely grated
  • 2 tsp finely grated ginger
  • 1 tbsp sesame oil
  • 1 tbsp mirin or Korean rice wine
  • 1/4 tsp freshly ground black pepper
  • 1 brown onion, thinly sliced
  • 3 spring onions, cut into 4cm lengths
  • 1 small carrot, cut into thin matchsticks
  • 1 tbsp vegetable oil
  • 1 tbsp toasted sesame seeds

Instructions

  1. Pop the beef in the freezer for 20 minutes to firm up, then slice it as thinly as you can across the grain.
  2. In a large bowl, whisk together the soy sauce, brown sugar, grated pear, garlic, ginger, sesame oil, mirin and pepper.
  3. Add the beef, onion and carrot to the marinade and toss well. Cover and refrigerate for at least 30 minutes, or up to overnight for the best flavour.
  4. Heat half the vegetable oil in a large heavy-based frying pan or wok over high heat until smoking hot.
  5. Add half the beef mixture in a single layer and cook, tossing occasionally, for 3-4 minutes until browned at the edges and just cooked through. Remove and repeat with the remaining oil and beef — cooking in batches keeps the heat high so the meat caramelises instead of stewing.
  6. Return all the beef to the pan, add the spring onions and toss for 30 seconds.
  7. Scatter with sesame seeds and serve with steamed rice, kimchi and lettuce leaves for wrapping.
