Banh Xeo (Crispy Vietnamese Pancake)

Banh xeo means "sizzling cake", named for the sound the batter makes when it hits a hot pan. The result is a shatteringly crisp, turmeric-golden pancake folded over juicy pork, prawns and bean sprouts.

The best part is how you eat it: tear off a piece, wrap it in a lettuce leaf with a handful of mint and coriander, and dunk the lot in nuoc cham. Crunchy, fresh, salty and bright all at once.

The batter is just rice flour, coconut milk and turmeric — no eggs, no fuss. Once you've made the first pancake and got your pan heat sorted, the rest come out perfectly every time.

Ingredients

  • 200g rice flour
  • 1 tsp ground turmeric
  • 200ml coconut milk
  • 300ml cold water
  • 2 spring onions, finely sliced
  • 300g pork belly or pork shoulder, thinly sliced
  • 300g raw prawns, peeled and deveined
  • 1 brown onion, thinly sliced
  • 2 cups bean sprouts
  • 4 tbsp vegetable oil
  • 1 baby cos or butter lettuce, leaves separated
  • 1 cup mixed mint and coriander leaves
  • 125ml nuoc cham dipping sauce, to serve

Instructions

  1. Whisk the rice flour, turmeric, coconut milk, water and a pinch of salt into a smooth, thin batter. Stir in the spring onions and rest for 15 minutes.
  2. Heat 1 tablespoon of oil in a 24-26cm non-stick frying pan over medium-high heat. Cook the pork slices for 2-3 minutes until browned, then add the prawns and onion and cook for 1-2 minutes more. Remove to a bowl.
  3. Wipe the pan, add 2 teaspoons of oil and get it properly hot. Give the batter a stir, then pour in a thin layer (about 150ml), swirling quickly to coat the base — it should sizzle loudly.
  4. Scatter a quarter of the pork, prawns and onion over one half, top with a handful of bean sprouts, then cover with a lid and cook for 2 minutes.
  5. Uncover and cook for another 2-3 minutes until the edges are lacy and crisp and the base is golden. Fold the pancake in half over the filling and slide it onto a plate.
  6. Repeat with the remaining oil, batter and filling to make 4 pancakes, keeping the cooked ones warm in a low oven.
  7. Serve with lettuce leaves, herbs and nuoc cham — tear, wrap, dip, repeat.
