Bakso (Indonesian Meatball Soup)

Bakso is Indonesia's beloved street-food meatball soup — springy beef meatballs bobbing in a clear, peppery broth with noodles, greens and a shower of fried shallots. It's sold from carts on nearly every corner in Indonesia, and one bowl explains why.

The magic is in the texture of the meatballs. Blending the mince with tapioca flour and iced water gives them that signature bouncy bite, completely different to an Italian-style meatball.

You don't need any special gear beyond a food processor, and the broth comes together while the meatballs poach. Set out kecap manis and sambal at the table so everyone can season their own bowl, just like at a bakso cart.

Ingredients

  • 500g lean beef mince
  • 100g tapioca flour (or cornflour)
  • 5 garlic cloves, 3 minced and 2 smashed
  • 1 egg white
  • 1½ tsp salt
  • 1 tsp ground white pepper
  • 125ml iced water
  • 1.5 litres beef stock
  • 2 spring onions, thinly sliced
  • 1 handful celery leaves, roughly chopped
  • 200g rice vermicelli or thin egg noodles
  • 2 baby bok choy, quartered
  • Fried shallots, to serve
  • Kecap manis and sambal oelek, to serve

Instructions

  1. Put the beef mince, tapioca flour, minced garlic, egg white, salt, ½ teaspoon of the white pepper and the iced water in a food processor. Blitz for 1-2 minutes until you have a smooth, sticky, pale paste — the colder the mixture, the springier the meatballs.
  2. Bring a large saucepan of water to a gentle simmer. With wet hands, squeeze the paste through your fist and scoop off walnut-sized balls with a spoon, dropping them straight into the water.
  3. Poach the meatballs for 8-10 minutes until they float and are cooked through. Scoop out with a slotted spoon and set aside.
  4. In a stockpot, bring the beef stock to a simmer with the smashed garlic cloves and remaining white pepper. Simmer gently for 10 minutes, then season to taste with salt.
  5. Meanwhile, cook the vermicelli according to the packet directions, then drain. Drop the bok choy into the broth for the last 2 minutes to wilt.
  6. Add the meatballs to the broth and warm through for 2-3 minutes.
  7. Divide the noodles between bowls, ladle over the broth, meatballs and bok choy, and top with spring onion, celery leaves and fried shallots. Let everyone add kecap manis and sambal to taste.
