Bai Zhuo Xia (Cantonese Poached Prawns)

Bai zhuo xia is restraint as a cooking technique. Good prawns go into seasoned water for barely two minutes, come out sweet and snapping, and everything else happens in the dipping bowl.

The sauce is where the work is, and it is still almost no work: soy, a little sugar, piles of julienned ginger and spring onion, then hot oil poured over the top so it sizzles and softens the aromatics.

Peel them at the table with your fingers. It is not a tidy dinner, which is part of the appeal.

Ingredients

  • 600g raw king prawns, shell on
  • 4 slices ginger
  • 2 spring onions, halved
  • 1 tbsp Shaoxing wine
  • 1 tsp salt
  • 3 tbsp light soy sauce
  • 1 tbsp water
  • 1 tsp caster sugar
  • 2cm piece ginger, finely julienned
  • 2 spring onions, finely sliced
  • 1 long red chilli, finely sliced
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil

Instructions

  1. Rinse the prawns and snip off the long antennae with scissors. Leave the shells on.
  2. Bring a large saucepan of water to the boil with the ginger slices, halved spring onions, Shaoxing wine and salt. Let it bubble for 2 minutes so the water takes on the flavour.
  3. Meanwhile, stir the soy sauce, water and sugar together in a small heatproof bowl until the sugar dissolves. Pile the julienned ginger, sliced spring onion and chilli on top.
  4. Heat the vegetable oil in a small pan until it just starts to smoke, then pour it straight over the aromatics. It should sizzle hard. Stir in the sesame oil.
  5. Drop the prawns into the boiling water and cook for 90 seconds to 2 minutes, until the shells turn bright orange and the flesh has just firmed up. Do not walk away.
  6. Drain and tip onto a platter. Serve immediately with the dipping sauce alongside, and let everyone peel their own.
